Step 1
Clean the white rice and soak it for 3-4 hours.then drain the water and keep it aside.
Step 2
now make jaggery solution.for that,take 500 grams of jaggery in a pan.add 1/2 cup of water and allow the jaggery to melt on low flame.we will get jaggery solution.
Step 3
Now take a mixer grinder.add the soaked white rice,jaggery solution,salt,cardamom pods,cumin seeds,ghee and grind it to make a fine thick batter.
Step 4
Once you get the thick batter,transfer it to a mixing bowl.add all purpose flour,baking soda and coconut shredded(or coconut bite).mix it very well.our neyyappam batter is ready.
Step 5
Now take a big spoon of batter and pour into the hot oil and fry until it becomes golden brown in colour.remember to keep the flame on low to medium while frying.
Step 6
Sweet and tasty neyyappam/rice fritters is ready to serve with a cup of hot tea!!
