Unniyappam is a small round shaped popular traditional Kerala snack. It is made with rice flour, maida, jaggery and banana along with some spices and deep fried in coconut oil.

Step 1
Wash rice till the water becomes clear and then soak it for 6 hours. Then strain it from this water and grind it. Be careful not to grind it very finely. After that add bananas and grind. Then add maida and mix them well.
Step 2
Melt jaggery in1/2 glass water and strained .Pour the jaggery into the batter. Add a pinch of salt. Mix the batter with hands like idli batter.
Step 3
Add fried coconut pieces and cardamom powder. Saute sesame seeds and cumin seeds in ghee and add to the batter. Mix them well. Now the unniyappam batter is ready.
Step 4
Keep the batter for 6 hours to ferment. Place an unniyappam pan and heat.Pour coconut oil to the holes of the pan.When we pour batter into it, the oil will come up. When the oil become hot pour the batter into the holes.After some time the appams loosens and continue heating until it is cooked properly.
Step 5
Now make all the appams the same way. We get 45 appams with 2 cups of rice. Once it has cooled down,we can store them in airtight containers.
