Step 1
Take a soft muslin cloth and spread it on the mesh strainer..keep the strainer on large bowl and then pour two cups of curd on muslin cloth
Step 2
Now cover the curd from cloth by bringing all the corners of the cloth together...
Step 3
Now squeeze the cloth a bit so that we can remove extra water (whey) from the curd.
Step 4
If we have time we can hang the curd for 2 to 3 hours...some people hungs the curd over night.
Step 5
I prefer to squeeze the curd which I strained in muslin cloth and put any heavy object on it so that further excess water can be removed..let it be for 2 to 3 hours..

In the meantime soak the saffron in rose water or warm milk..for 5 to 10 minutes

Now check the curd..make sure that excess whey is properly drained...this step is very important for making our shrikhand creamy

Now transfer the curd in a bowl and add saffron milk or water in the bowl

Add powdered sugar and cardamom powder in the curd. Now mix is well untill you achieve creamy consistency . you can increase the amount of sugar as per your liking

Now garnish it with almonds and pistachios and few saffron strands

We can have this creamy dessert with puris or you can serve chilled shrikhand as a dessert
