Sondesh is famous bengali sweet but it is made all over india because it is very easy and quick ...recipe...which is made up of very few ingredients .....let's learn how to make it.. in my house it is generally made during fasting period.

Full cream milk

Step 1
First boil the milk ....turn off the flame and add 1 tbsp vinegar now stir it slowly..
Step 2
We will see that our milk gets curdled....if required you can add 1/2 tsp vinegar...
Step 3
Now drain off the curdled milk using cloth.rinse with cold water, making sure the paneer remains soft and removes vinegar flavor.
Step 4
Now squeeze the cloth and keep it on wooden platform...now put some heavy object on the cloth so that excess water can be removed. For 10 minutes...if you want you can hang the cloth for 30 minutes....but I prefer to put heavy object to speed up the process..

After 10 minutes take out all the Chenna and mash it with hand till it becomes soft and shiny
Step 6
Now heat the pan and put this chenna and jaggery into it....cook it on low flame for 3 to 4 minutes .( you can skip jaggery and add 1/2 cup of sugar also)

Now add in cardamom powder and few drops of rose water and mix well.
allow it to cool for 5 minutes..

Now you can give it a desired shape and garnish it with saffron or any dry fruit....
