2 cups for cooking chana dal & 1/2 cup for kneading wheat flour

Step 1
Wash chana dal & soak it in water overnight. Then cook it in 2 cups of water . Cook it well by giving the required amount of whistles. Then drain out the water. Keep a kadai on gas, put the chana dal into the kadai, add jaggery powder into it & cook till the chana dal & jaggery mixture comes out clean from the sides of the tava.
Step 2
Then after the mixture cools down completely put the mixture in the puran vessel (photo attached - 4th photo) & keep another vessel below it & churn the mixture so that fine mixture without lumps will fall into the vessel below which will look like the photo attached (photo attached - 3rd photo). This mixture is called puran. Keep it aside in a bowl.
Step 3
Now prepare dough of wheat flour as u normally make for chapattis by kneading the dough adding oil , salt & water to it & keep it aside for 1 hour. In 1 hour gaps knead the dough 2 to 3 times by adding oil & water. Finally the dough should look as shown in the 2nd photo.
Step 4
Now take a chapati rolling board put wheat flour on it , make dough into balls, put the ball on the rolling board by covering the balls with wheat flour, flatten it & roll it into slightly big puris with a roller, put 2 or 3 tbsp of puran & roll it slowly to a size of chapatis by dipping in the wheat flour in between & rolling again.
Step 5
Next keep a roti tava on gas, apply oil on tava, then roll the chapatis on the roller from the rolling board slowly & roll it back on to the roti tava & cook both sides of the chapatti till it is cooked well & colour of the chapattis changes. This is called poli. So now Puran poli is ready to eat. U can make around 8 to 10 polis with 2 cups of wheat flour. U can make dal with puran as u prepare normal dal & have the puran poli with this dal.
