Step 1
Cut potatoes, cauliflower, capsicum into pieces, add green peas & boil altogether in a cooker & give 10 whistles so that all the vegetables cook well & after the pressure releases from cooker, smash them well with a spatula.
Step 2
Take a kadai, pour oil in it & saute ginger-garlic paste for a minute, add onions & saute till soft, add tomatoes & saute for some time, add salt & saute till the gravy becomes soft & mushy. Add red chilly powder & pav bhaji masala & saute for a minute.
Step 3
Now add the cooked vegetables & cook for 2 to 3 minutes. Finally, add a blob of butter, sprinkle coriander leaves . The gravy should be semi-thick. Pav bhaji is ready to be served with buttered pav or bread made hot over the tava, sprinkle raw & finely chopped onion over the gravy with a squeeze of little lemon juice.
