Step 1
Cut brinjal and potato to medium sized wedges
Step 2
Shallow fry brinjal and potato (in oil) till they are golden brown and keep aside.
Step 3
In the same pan, heat oil and add cumin, finely chopped onions, green chillies and garlic. Cook till golden brown
Step 4
Add all the spices (turmeric, red chilly powder, coriander powder, garam masala and jeera powder ). Cook till oil separates.
Step 5
Grind tomatoes into a pulp and add to the above mixture. Keep covered and cook till oil separates.
Step 6
Add salt the fried potato and brinjal that was kept aside. Add water to adjust consistency. Keep covered and cook till potatoes and brinjal are fully done.
Step 7
garnish with coriander leaves and kasoori methi. Serve hot with Chapati or rice.
