Step 1
Set IP to sauté mode. When hot, add oil. Add mustard seeds and when it splutters add slit green chillies, urad dal Chana dal, dry red chillies and curry leaves. Sauté till the dals look slightly brown (maybe a couple of minutes)
Step 2
Add onions to this and sauté till the onions look transparent (maybe a couple of minutes)
Step 3
Add grated/finely chopped beetroot to it . Add a cup of water and close your instant pot. Cancel sauté
Step 4
Set to steam and set it to 15 minutes. Do not keep it to sealing, but keep it in venting
Step 5
Once done, add grated coconut and a teaspoon of coconut oil . Mix well, let it sauté for a minute or two.add salt.
