Step 1
Take a big round Eggplant and roast on direct flame from all side till it becomes brown, mash it with masher or grind in grinder
Step 2
Now heat 3 tbsp oil in a pan, add 1/2tsp cumin seeds, 1/4 tsp mustard seeds, 1 pinch Asafetida and cook till it gets brown, add ginger, 1 tbsp garlic and green chilli paste, cook for 2 minutes, add 1 chopped onion and cook for 2-3 minutes, add 1 chopped tomato and cook for 2-3 minutes, now add 1/4 tsp red chilli powder, 1/2 tbsp coriander powder, 1/2 tbsp turmeric powder and cook for 4-5 minutes on low flame
Step 3
Now add mashed eggplants, 1/4 tsp salt, mix it well and cook for 5-6 minutes
Step 4
Bharta is ready, serve it hot with roti/ indian bread
