Step 1
Peel potatoes, cut into small cubes & boil & cook the potatoes well by adding a pinch of turmeric & red chilly powder. U can also boil the potatoes whole, peel & smash them .
Step 2
Put oil in a kadai, add cut onions, ginger-garlic paste & saute till onions are translucent, add turmeric powder, red chilly powder & curry leaves & saute again. Add tomatoes & saute till tomatoes r smashed well. Add salt & water & cook with covered lid till it becomes a thick gravy.
Step 3
Now add the potatoes , add required amount of water so that the gravy is semi thick & cook with closed lid. Potato curry is ready & can be had with rotis, puris, dosas & even with rice as side dish
