Step 1
Heat oil in a wide pan. Add mustard seeds, slit green chillies, peanuts and curry leaves. Fry them for about 2 minutes.
Then add brinjal pieces. You can cut them in such a way that each of the brinjal gives a total of 4 small pieces.
Cook for 5-6 minutes in medium flame. Now it's time to add tamarind paste along with little bit of water. After adding tamarind paste, add 1/2 inch of jaggery. Let this whole mixture cook until the raw smell of tamarind goes away.
This will take roughly about 5-6 minutes.
Step 2
At this stage add required amount of salt and hing. Mix it well. Now add Vangi Bath Masala Powder.
Let it cook for a few seconds. Add 2 tbsp of cooking oil again after adding the Vangi Bath Masala. Last step is to add cooked white rice into the masala mixture and mix it well. Turn off the flame.
Garnish with coriander leaves. Drizzle 1.5 tsp of ghee at the last for the glaze and taste.
Serve it hot.
