Step 1
Take a pan and add coriander seeds, chana dal and dry rechilies and dry roast fosome timeme. Then add some oil and keep roasting till the dal changes color to light brown. Keep it aside and let it cool. Grind it to a corase paste.
Step 2
Take another pan and add around 3 tbsp of oil. When hot add mustard seeds. When it splutters add urad dal, hing, chana dal and curry leaves. Saute till the dal turns light brown. Add the brinjal, salt and turmeric to it. Mix it all up and cover it and cook it for 6-8 minutes.
Step 3
Remove the lid and make sure and add the grated powder from step 1 and coconut to it. Saute and let it fry till the raw smell of the powder is gone (maybe a couple of minutes)
Step 4
Garnish with coriander leaves and serve hot with chapati or rice
