Step 1
Soak split urad dal in water overnight.
Step 2
Drain out the water & grind it in mixie without water alongwith salt. Then keep it aside for 4 to 6 hrs.
Step 3
Next cut finely green chillies, ginger & curry leaves & put it in ground batter & mix altogether.
Step 4
Then keep kadai on gas, put oil in it. After the oil is very hot keep the gas on medium flame.
Step 5
Next wet your palm with water, dip your fingers in the ground batter & scoop little batter with your wet fingers & roll it into a ball by shaking the batter in your palm & finally make a hole in the batter ball & put it immediately into the hot oil.
Step 6
Deep fry the balls & keep it aside to cool. Do not make it too brown & crispy.
Step 7
Next, take a bowl mix curd & sugar well, put the fried & cooled vadhas into it & immerse it in curd.
Step 8
Splutter mustard seeds in oil in a small kadai, add curry leaves, let it cool and pour it over the Dahi vada, refrigerate it & serve the cold dahi vadas.
