    You can take any rice except brown rice,Matta rice.colour of the rice must be white.

    Step 1
    Clean the white rice and soak it in warm water for 4 hours.
    Step 2
    after 4 hours,drain the water and add 1 1/2 cup of cooked rice into it.then add sugar into it(1 1/2 cup).
    Step 3
    now add all purpose flour(1/2 cup) and cardomom (you can use cardamom powder also).mix it very well.
    Step 4
    then transfer to a mixer grinder and grind it adding little water.the consistency should be not too thick and not too loosy.
    Step 5
    Keep is aside for 5-8 hours.
    Step 6
    after 8 hours,add 1/2 teaspoon of baking soda and give a mix again.our batter for appam is ready.
    Step 7
    now put an appam mould on medium flame.pour oil till 3/4 th portions of it.take a spoon and fill the appam batter into it one by one.flip to the other side after 30 sec and then fry that side till it becomes golden brown in colour.(so that,only one side of the appam will be in golden brown colour). Remove from oil when it is done.
    Step 8
    sweety and spongy Kannur appam is ready to enjoy!!
