Step 1
Soak the sago for 3 hours and in the meantime boil the potatoes and rest the pea nuts...
Step 2
Transfer the peanut in plate and let it cool...remove the husk of peanut and coarsely grind it...... grate 2 potatoes and drain out all the water of grated potatoes by pressing it between our palms
Step 3
Now after 3 hours check the sago When you press the pearls between your forefinger and thumb, they would get mashed easily...this indicates that they are well soaked ..

Now take a bid bowl and mix soaked sabudana, boiled potatoes, grated potatoes coarsely crushed peanuts, green chillies curry leaves, salt ,sugar, lemon juice, and coriander leaves.
Step 5
Combine and mix thoroughly with your hands or with a spoon. Check the taste and add more salt, sugar and lemon juice if needed.
Step 6
Now take some portion of the mixture in your hands and shape them into a flat round patty

Now heat the oil in a pan and deep fry sabudana vada till they turn golden brown...
Step 8
Transfer them on kitchen towel to soak the extra oil....serve it hot ...It is crispy, delicious and tastes great with a simple Coconut Chutney and even sweetened Curd (Yogurt...
