Step 1
Preparing puris for Dahi-batata-sev puri - Buy readymade puris or u can get pani puri pappads in provision shops & deep fry in oil & keep it aside
Step 2
Next prepare tamarind water - Wash tamarind well & boil it alongwith jaggery & water till the jaggery melts completely. After it cools squeeze & strain the liquid & keep it aside in a bowl. This liquid should be slightly thick.
Step 3
Next prepare Green chutney - Wash coriander & mint leaves & grind it alongwith ginger, green chillies, lime , salt & water & keep this also aside in a bowl.
Step 4
Soak white or safed vattana overnight & boil it with turmeric & salt, drain out the water & keep it aside in a bowl.
Step 5
Boil potatoes, peel the skin & smash it well & keep it in a bowl.
Step 6
Beat dahi, add sugar, mix both together & keep it in a bowl.
Step 7
Now take a plate keep puris in it by making hole on the top of the puris. Also keep bowls of green chutney, tamarind-jaggery liquid, curd-sugar mix, smashed potato, boiled white vattanas, cut onions, cut coriander leaves & sev all around the puris as shown in photo above.
Step 8
Now put all the above items in the hole of the puris in this order - potatoes, vattanas, green chutney, tamarind liquid, curd, sev, onions. Put all these items inside the holes & also on top of the puris. Sprinkle coriander leaves & onions over it.
Step 9
Finally, sprinkle salt, chaat masala, red chilly powder, jeera powder over it. Now Dahi-sev-bata puri is ready to be served. Instead of white vattana u can also use brown chana, sprout moong, boondi etc.
