Step 1
Boil and peal potatoes and chop them into any shape that you like. I have chopped them lengthwise for this recipe.
Step 2
Heat oil in a wide pan and add cumin seeds, chopped ginger and chopped green chili.
Step 3
Once the raw smell of ginger goes, add the chopped boiled potatoes and mix well in the oil.
Step 4
Add turmeric, red chili powder, dry mango powder (Amchoor), garam masala and salt to taste. Mix well and let it fry a little in the oil.
Step 5
Add crushed kasoori methi and cook for a few more mins. Once its cooked completely, turn off the flame and garnish with chopped cilantro. Serve with rice or roti.
