Step 1
Boil the water and add the lemon into it.when the lemon is cooked well,drain the water and cut it into small cubes.
Step 2
In a bowl,add the chopped mangoes,cooked and chopped lemon,finely chopped carrot and finely chopped dates into it.
(The seeds of the dates should be removed)
Step 3
add salt into it and give it a good mix.keep it aside so that the salt get into the fruits well.
Step 4
To make pickle powder,
Put a pan on very low flame.add all the ingredients in the pickle powder ingredients section and roast it until it gives a good smell.turn off the flame and allow it to cool.
After that,grind it in a mixer grinder so that you will get a fine pickle powder.

finally Add the pickle powder into the bowl containing finely chopped mangoes,lemon,carrot and dates.

mix it very well,adjust the salt and add vinegar into it.
Step 7
next is seasoning process.for that keep a pan on medium flame.add vegetable oil into it.when the oil is hot,add mustard seeds into it.when the mustard seeds splutter,it is done.add this to the bowl and mix it very well.

Homemade pickle is ready!!
