Step 1
Boil 1 cup uncooked rice and spread it out on a plate for it to cool down before you start making lemon rice. I used 3 cups of cooked rice for this recipe.
Step 2
Heat oil in a pan and add mustard seeds. Once it splutters, add chana dal, split urad dal, raw peanuts, chopped green chili and curry leaves.
Step 3
Add turmeric and let it fry in the oil for a few seconds. Reduce the flame to low and add the cooled rice to the mixture. Mix everything well to coat the rice well with the oil.
Step 4
Add salt to taste and also 1/2 tsp of sugar just to add a little flavor. Also squeeze lemon juice from 2 lemons into the rice and mix everything well and keep covered for a few mins.
Step 5
Then add the shredded coconut into the rice mixture and keep covered for 1 more minute. Then turn off the flame and garnish with cilantro and serve hot!
