Step 1
Boil potatoes in cooker. Keep aside
Step 2
Now scrape one whole coconut & grind it. Scraped coconut should be ground in 3 stages. Put the whole scraped coconut in a mixer & grind with very little or if possible without water. Water should be warm. Now squeeze the milk out of it & keep it aside. Let us call it 1st milk. Again grind the ground coconut with little more warm water & again squeeze the milk out of it & keep it aside. This will be called 2nd milk. Again grind the ground coconut with more warm water & squeeze the milk well out of it & call it 3rd milk.
Step 3
Now take a kadai, put 3rd coconut milk in it, put boiled potatoes along with onions cut into 4 pieces, slit green chillies, thin slices of ginger & salt & boil altogether till it is cooked well. Now add 2nd milk & cook again for 3 or 4 minutes. Finally add 1st milk & switch off the gas when the 1st milk starts to boil. Stew is ready.
Step 4
Heat coconut oil & pour over the stew, add curry leaves & close the kadai. Stew is ready to be served with idli.
Step 5
Note that u can also make stew with only 2 stages of milk if u feel u were able to squeeze the milk completely out of it with only 2 grinding.
