Step 1
Take a wide pan and heat 2tbsp ghee on a medium flame. Add 3 cups of grated coconut.
Step 2
Keep stirring the coconut ghee mixture till it’s well coated and most of the moisture from the coconut is removed. Keep the flame on medium-low to make sure that the coconut does not burn.
Step 3
After 4-5 mins the coconut mixture should look semi dry. Now add the 2 cups of evaporated milk and the 2 cups of sugar and mix well. You can also use condensed milk instead of adding sugar separately. I prefer using evaporated milk so that I can control the quantity of sugar.
Step 4
Keep stirring the mixture till it becomes semi dry. Now add the remaining 1 cup of grated coconut and continue stirring to avoid burning.
Step 5
Add 1tsp of ground cardamom powder and stir well.
Step 6
Continue cooking the mixture till all the water evaporates and it easily leaves the pan when you stir. The mixture should be sticky but not watery. Now switch off the flame and the barfi mixture is ready to be transferred to a setting bowl.
Step 7
Take a flat vessel or pan with some edges to set the barfi mixture and grease it with ghee. Now transfer the barfi mixture into the pan and spread it evenly keeping it to your desired height.
Step 8
Sprinkle the sliced almonds on top of the barfi and keep it aside to cool for around half an hour.
Step 9
Once the barfi mixture has cooled place the pan in the fridge to set well for around 4-5 hours.
Step 10
Once it’s fully set, take it out of the fridge and cut into desired shapes and serve.
