Step 1
Boil & cook chicken & shred it into small pieces.
Step 2
Cut the vegetables into thin fine pieces. Take a pan, put oil in it & saute the vegetables. Add shredded chicken, put salt & saute for 1 more minute.
Step 3
Take a bowl & mix together cornflour & maida. Beat egg, put it in the bowl, add little water & mix altogether into a smooth batter.
Step 4
Next keep a flat pan on the gas & make a omelette of the batter & cook it on one side.
Step 5
Put the sauted vegetables & chicken in the centre in a vertical manner & fold the omelette from all sides. Note that the fold is firm & tight. The folded omelette will look longish like a stuffed dosa but note that it is closed from all sides.
Step 6
Next deep fry the stuffed omelette in a kadai.
Step 7
Cut the stuffed omelette into broad pieces as shown in photo & serve it hot.
Step 8
Please note that the stuffed omelette is folded firmly from all sides or it will open up while deep frying. Also note that omelette should be heated only on one side.
