Step 1
First,we will make rice.
For that,put a big pan (or cooker) on medium flame. Add 2 teaspoons of ghee. Add 1 cup of jeerakashala rice.roast it for 1-2 minutes.
Step 2
then add 2 and half cup of water and adjust the salt.cover and cook it for 10 minutes.(low-medium flame)
Keep it aside once it is done.
Step 3
To make Biriyani masala powder,put a pan on low flame,add all the ingredients in the biriyani masala powder ingredients section. Roast for 4-5 minutes. Allow it to cool.then grind it to make a fine powder.
Step 4
Next we will prepare the masala for Biriyani.
Put a pan on medium flame. Add 4-5 tablespoon of coconut oil.when the oil is hot,add onions,tomatoes,green chillies,ginger garlic paste,Corrionder leaves and salt. Saute well.
Step 5
now add turmeric powder,chilli powder,black pepper powder,Corrionder powder,garam masala powder and the biriyani masala powder(which we already made).
Step 6
Give it a good mix and sauté the onions till all the masala powders are well cooked well.
Step 7
next,you add half cup yogurt and chicken into it. Mix well. Cover and cook for 15 minutes on medium flame.Our masala is ready.
Step 8
now,take a big pan on low flame.transfer the masala into it.then transfer the cooked jeerakashala rice over the masala(spread the rice evenly).squeeze a lemon over the rice and spread a pinch of garam masala powder,fried onions and Corrionder leaves.
Cover it tightly with a lid and cook for 10 minutes on low flame.(this process is called Putting Dum)
Turn off the flame and serve it hot!!
