Soak saffron strands in milk.
Step 1
Khurma:-
In a vessel take 3 tbs of oil.
Chop 250 grams of onion along with green chillies as per your taste. Cook it on lower flame. Let it turn golden yellow in colour
Step 2
Add finely chopped tomatoes. Let it cook for another 5 mins. Add 1 tsp ginger garlic paste to it.
This is called birista ( mixture of onion and tomatoes slowly cooked along with chillies)
Step 3
Transfer this into a pressure cooker and add mutton and a lemon juice, Garam masala, turmeric powder, red chilly powder, coriander powder, biryani masala powder. Cook in pressure cooker for about 15-20 mins.
Step 4
Once the pressure is released add powdered almonds. And let it cook for another 5 mins.
Step 5
Rice- Boil water with clove, cinnamon, cardommom and salt. Once it comes to boil. Add rice. Switch off the flame once the rice is 70% cooked. Strain it and keep it aside.
Step 6
Assembling:-Take a bigger vessel. Add little oil at the base. Put 1 layer of aromatic rice., Freshly cut coriander leaves, sliced tomatoes and saffron milk.
2nd layer - khurma
3rd later - repeat the first layer. Keep it on stove and keep a heavy object on the lid. Cook it till the steam appears when you suddenly open the lid. It should take around 20 to 30 mins
