Step 1
Start making the coating mix for Baingan Tawa Fry. Mix gram flour, cumin powder, dry mango powder, kashmiri red chilli powder, turmeric powder and salt as per taste.
Step 2
Next step is to prepare the brinjal for frying. I took about 8-10 brinjals for this recipe. Trim off the stems. Then slice the brinjals to at 1 cm thick roundels. The slices should neither be thick or thin. Thin slices would be tough to flip while thick slices will take time to cook when pan fried. Once this step is done it's time to coat them and fry. Make sure to coat the slices well from both the sides in the coating mixture prepared in step 1.
Step 3
Let the brinjal slices rest for around 7-8 minutes for the masalas to stick and absorb well before frying.
For frying take 3 tbsp of oil on a tawa medium flame. Once the oil is hot, add the slices one by one. Let it fry for 4-5 minutes on one side. Then flip it to fry the other side. For frying while you can choose any oil of your choice, brinjals in this recipe taste best in mustard oil.
Step 4
Once fried on both the sides, time to take them off the tawa and into the bellies as a perfect side dish with dal chawal or curd rice.
