Step 1
Wash bhindi and dry well using paper towels. Cut them into 1/2 inch pieces and keep wiping the knife to remove any slime.
Step 2
Heat oil in a wide pan and add cumin seeds, curry leaves, slit green chili and chopped garlic cloves. Let it fry for a min making sure not to let the garlic burn.
Step 3
Now add the chopped bhindi and spread it evenly in the pan so that all pieces are well covered in the oil and cook at the same time. Let the bhindi fry in the oil without stirring too often to avoid sliminess.
Step 4
Once the bhindi is partially cooked, add turmeric, red chilli powder and salt and mix well.
Step 5
In the mean time take another pan and dry roast some peanuts along with the shredded coconut. When the coconut turns light golden brown, keep the mixture aside to cool and grind coarsely.
Step 6
Once the bhindi is completely cooked, switch off the flame and add the ground peanuts and coconut mixture to it and mix well. Garnish with chopped cilantro and serve with rice or roti.
