Step 1
Clean the toor dal and boil it with 1.5 cups of water, a pinch of turmeric and a tea spoon of oil. Keep the lid closed. Keep cooking till its soft, but not mushy.. Cooking it on a pressure cooker or instant pot would mash the dal. You want to cook the dal till its just soft and done. Once done, keep it aside.
Step 2
Meanwhile, peel the ridges of the ridge gourd. You don't have to peel the whole skin. Chop it into small pieces.
Step 3
Heat oil in a pan and add mustard and cumin seeds when its hot. Wait till it splutters
Step 4
Add curry leaves, crushed garlic and onions to this. Saute till the onions turn transparent.
Step 5
Add chopped green chillies, turmeric and hing to this. Saute for a few minutes. Add the chopped ridge gourd to this.
Step 6
Add 1/4 cup water to this. Close the lid and let it cook till the veggies are soft and cooked (took around 8 minutes for me)
Step 7
Once the veggies are done, add the drained cooked toor dal to this.
Step 8
Add tamarind water, jaggery and salt to this. Add niger seeds powder to this. Cover and cook for a few minutes more. Serve with chapati.
