Step 1
Soak paneer in warm water for 15 minutes. Cut it in cubes and set it aside.
Step 2
Set instant pot to saute mode and ghee to it. When its hot add cumin seeds, slit green chillies and ginger garlic paste. Saute till the raw smell of the ginger garlic paste goes (around 1.5 minutes)
Step 3
Add onions to this. Saute for a couple of minutes. Add tomatoes to this along with all the masalas. Saute for a couple of minutes
Step 4
Wash the spinach and add it as is (you don't have to cut the spinach) along with one cup water. Set IP to manual mode, and cook it on high pressure for 2 minutes. Natural pressure release after 5 minutes of waiting (after the beep).
Step 5
Use a hand blender and blend all the ingredients in the pot to a nice creamy texture.
Step 6
Set IP to sauté mode, add garam masala, a little sugar and half cup milk to this. Let it boil for 30 seconds. Add paneer cubes to this. Let it soak in and let it cook for 2 minutes. Top it off with Kasuri methi. Make sure the paneer is cooked well and you can serve it hot with rice or chapati.
