Step 1
First make fine cashews nut paste and keep it aside
Step 2
Warm up the heavy cream in the microwave for a few seconds. Take few saffron strands, crush and add to the warm cream. Mix and keep it aside. Over time saffron releases its flavor and color into the cream.

Now heat 1 tbsp ghee in a pan and add cardamom pods, cinnamon stick, green chilli, cloves , ginger, garlic onions , and tomato cook them for 5 minutes and then add 1 cup of water...
Step 4
Let it cool completely now grind everything and make a fine paste..now sieve the puree making sure the puree is smooth and silky. keep aside.
Step 5
Now take a pan and heat 2 tbsp butter. Now add cumin seed and bay leaf now keep the flame low add turmeric the onion tomato puree
Step 6
Cook it for 2 minutes now add red chilli powder,cardamom powder and salt as per the taste. Now add cashews nut paste to the gravy it will make our gravy thick and reduce the tangyness of tomatoes....add 1/2 cup of water if you find it thick....now cook it for 5 minutes

further, add ¼ cup cream and saffron mix In the gravy and cook it for another 2 minutes
Step 8
Now add250 grams of paneer cubes cover and simmer for 5 minutes or until flavours are absorbed well.
Step 9
Now we ll see every thing is cooked well add 1 tspn sugar and kasoori methi to the gravy.....mix it well.. our shahi paneer is ready...

Serve it hot with tandoori roti, naan or rice...
