This is wonderful dish for white rice. The Brinjal tastes melt you while eating.

Soak it for 20mins then make it as tamarind pulp

Step 1
Divide the Brinjal into four parts don't cut them off. Then add 2 tbsp groundnut oil in a pan fry the Brinjal for 5 to 7 mins in low flame. Then let it cool.
Step 2
Pour 8 tbsp groundnut oil in a pan . Then add mustard seeds, cumin, aniseed and Fenugreek after that add garlic cloves fry it for 2mins. Then add onions fry it until it's color changed into light brown.
Step 3
Add tomatoes fry it for 5mins then add turmeric powder, red chilli powder and coriander powder fry them for 5 mins with low flame. Then Brinjal fry it for 3mins. Then pour the tamarind pulp.
Step 4
Add 1litre water and salt. Cook it for 15mins with medium flame. Then pour gingelly oil and stir it well then leave it 3mins with low flame. After that you can serve it. Coriander leaves for decoration.
