Jalebi is very popular indian sweet dish...never thought of making jalebi at home would be so easy.. I am sharing my tried and true recipe of jalebi..which be crunchy ,crispy and juicy for long period of time

Ingredients

One cup warm water for batter and rest we can use to make sugar syrup

Step 1
First add all the ingredients for batter.... all purpose flour, urad daal ka aata , curd, baking soda and 2 tbsp veg oil ...now add warm one cup of water and make a smooth batter
Step 2
stir the batter briskly for 4 to 5 minutes. This adds volume to the batter and makes it even, flowing and smooth. There should be no lumps in the batter. We want thick but runny batter.
Step 3
Now keep the batter overnight for fermentation
Step 4
Let's prepare sugar syrup Take 2 cups of sugar in a pan. Add saffron strands to it. I highly recommend that you add saffron, as it gives a nice orange-yellow color and a fragrant aroma to the jalebis
Step 5
Add 1 cup of water and Place the pan on the flame on a low heat and begin to stir so that all the sugar dissolves.
Step 6
On a low medium flame we have to cook the sugar syrup untill we get string consistency ...we have to check it by taking drop of syrup between our thumb and index finger...by joining and pulling our finger we will see one string of sugar syrup...this is the time to switch off the flame
Step 7
Add cardamom powder and pinch of orange food colour to our sugar syrup add few drops of lemon(5 to6 ) juice..so that our sugar syrup will not get crystalized
Step 8
Heat the flat bottom frying pan and put the oil or ghee to fry..when the oil becomes hot enough check the oil by putting few drops of batter in it .the drops should come to the surface quickly...our oil is ready to fry jalebies
Step 9
Pour the bottle in tomato sauce squeeze r bottle or take any mineral water bottle and make a hole on it cap ...hole should be made from internal part of the cap...which will make the pipe of jalebi round and in desired shape..
Step 10
Now squeeze the bottle and make concentric rings with the batter.When one side is partly cooked and the batter has firmed up, turn over with a pair of tongs and fry the other side.(it will take time to achieve correct shape but with practice we can do it) ..always make jalebies on high flame and then cook them on medium flame
Step 11
When the jalebi turn golden brown transfer the jalebies immediately into the warm sugar syrup.. dip it into the syrup and take out after 10 seconds only..other wise it will soak too much sugar syrup. ( sugar syrup should be always warm)
Step 12
Make all the jalebies like this only and serve it hot ...Jalebi can be served alone or in combination with other food items. Like with milk ,with Rabri or with kheer.
