Step 1
Cut tindora into thin slices lengthwise. You can also use frozen sliced tindora for this recipe.
Step 2
Bring water to boil in a vessel and add the sliced tindora to it with a pinch of salt. Let it boil for a few mins till the tindora is 50% cooked. Drain the water and keep aside.
Step 3
Heat oil in another pan and add mustard. Once it splutters, add curry leaves and the half cooked tindora to the pan.
Step 4
Add turmeric, red chilli powder, jeera powder and coriander powder and mix well. Let it fry for a couple of minutes till the tindora is fully cooked. Add salt as needed and stir occasionally to cook evenly. Garnish with cilantro and serve with rice or roti.
