Banana/plantain

Banana must be medium ripe.
coconut (grated)

Half section of a full coconut is taken

Vegetable oil for frying the unnakkaaya
Step 1
Cut each of the banana into half and steam it for 10 minutes.we need to get a fine thick paste of banana so don’t over cook it.
Step 2
Mash the cooked banana with a masher or fork.it’s always better to mash when the banana is hot.
(Mashed banana should be little thick.if it is wet and little loosy,you can make it thick by adding all purpose flour or bread crumbs.)
Step 3
When the mashing is done well, keep it aside.
Step 4
To make coconut filling,take a pan on medium flame,add ghee,coconut oil,grated coconut,sugar,cardamom powder,cashew nuts and raisins into it.
Stir the mixture continuously so that it will not stick on the pan and cook for 5 minutes till it become golden in colour.
Filling is ready
Step 5
Apply a touch of oil on both your palms and make small ball of mashed banana according to the size of unnakkaaya you want to make.
Step 6
Press it in your greased palm into a size of small roti(not too thin not too thick).add 1 tbspn of coconut filling into and close it in the shape of unnakkaaya.
Step 7
once you get the shape,then it is ready to fry.(fry it on medium flame only)
