stuffed rice snack/chicken kalmaas
This is a traditional malabar snack which really tastes great!!

Boneless chicken is taken which is cooked well and finely crushed.

Step 1
Soak the rice in boiled water for 4-5 hours.
Step 2
clean the soaked rice well and transfer it into a mixer grinder.add coconut grated,onion,fennel seeds,salt, and warm water into and grind until you get a thick mixture.(don’t add too much water.always check the consistency,and add water accordingly.if it becomes loosy you can make it thick by adding rice flour)
Step 3
for making chicken filling,
On a pan on medium flame, add coconut oil.when it is hot,add onions,green chillies,ginger garlic paste and salt.saute it until the onion is transparent.

then add turmeric powder,Garam masala,curry leaves into it and mix well.
Step 5
Finally add the cooked boneless chicken(which is finely crushed)into it and mix well.
(Chicken is cooked adding turmeric powder and salt)

filling masala is ready.now we will start filling the kalmaas.
Step 7
for that make small balls of grinded rice mixture.spread oil on your palms.take one rice ball and flatten it.add 1 tbspn of chicken filling into it and close it in the shape given in the picture.
Do the same for the others too.
Step 8
Steam cook these kalmaas for about 15 minutes.when it is well cooked allow it to cool.then make a masala of chilli powder,turmeric powder and salt adding little water.spread this on the kalmaas for frying.

take a deep pan on medium flame.add vegetable oil.fry the kalmaas!!
Step 10
This is really a very good spicy snack.you can also use prawns/beaf for filling instead of chicken.
