Boneless chicken is taken which is cooked well and finely crushed.

Step 1
Soak the rice in boiled water for 4-5 hours.
Step 2
clean the soaked rice well and transfer it into a mixer grinder.add coconut grated,onion,fennel seeds,salt, and warm water into and grind until you get a thick mixture.(don’t add too much water.always check the consistency,and add water accordingly.if it becomes loosy you can make it thick by adding rice flour)
Step 3
for making chicken filling, On a pan on medium flame, add coconut oil.when it is hot,add onions,green chillies,ginger garlic paste and salt.saute it until the onion is transparent.
Step 4
then add turmeric powder,Garam masala,curry leaves into it and mix well.
Step 5
Finally add the cooked boneless chicken(which is finely crushed)into it and mix well. (Chicken is cooked adding turmeric powder and salt)
Step 6
filling masala is ready.now we will start filling the kalmaas.
Step 7
for that make small balls of grinded rice mixture.spread oil on your palms.take one rice ball and flatten it.add 1 tbspn of chicken filling into it and close it in the shape given in the picture. Do the same for the others too.
Step 8
Steam cook these kalmaas for about 15 minutes.when it is well cooked allow it to cool.then make a masala of chilli powder,turmeric powder and salt adding little water.spread this on the kalmaas for frying.
Step 9
take a deep pan on medium flame.add vegetable oil.fry the kalmaas!!
Step 10
This is really a very good spicy snack.you can also use prawns/beaf for filling instead of chicken.
