Step 1
Deep fry medium sized chopped potatoes until it turns golden brown.
Step 2
In a pan, add oil and after it gets heated up add the whole spices- black and green cardamoms, cloves and bay leaf and mix for 30 secs. Now add dried red chillies and onions and salute until transparent. Now add ginger garlic paste and cook until raw smell is gone. Now add tomatoes, cashew nuts and cook until tomatoes become mushy. Cool down the mixture and grind into fine paste.
Step 3
In another pan, add oil and ghee. Add the ground masala paste and mix thoroughly. Close the lid and let it cook for 5 mins on low flame.
Step 4
Now add the spices- turmeric powder, salt, red chilli powder, coriander powder, cumin powder, dry mango powder and mix properly. Close the lid and let it cook for 20 mins on low flame. Keep stirring in between.
Step 5
After the oil is released, add chopped green chillies. Continue by adding the deep fried potatoes and cover the lid and cook for 2 mins on low.
Step 6
Add water and coriander leaves mix and cook it on low for 5 mins and serve hot.
