Step 1
Soak rice & urad dal in separate bowls for 5 to 6 hours. Also soak fenugreek seeds in water. After soaking grind them separately in a mixer - 1st grind urad dal & then rice. It should be ground well into a smooth paste. Also grind fenugreek seeds separately. Ground rice & urad dal should be put in the same vessel, add salt, mix & keep the batter overnight for 12 hours during normal temperature for fermentation. If the temperature is very high or very low then the number of hours required for fermentation will increase or decrease.
Step 2
After the batter has fermented, add water as per the required consistency for making dosa & mix it well with a spatula.
Step 3
Now keep dosa tava on gas apply oil, & spread the batter on the tava in a round shape, pour oil on the sides of the tava, flip it over after one side has cooked well. Then heat the other side. Dosa is ready. Put it in a serving plate. Have it with coconut chutney which is my next recipe. You can make the dosas soft or crispy. I have made it soft as my family likes soft dosas. You can also have it with tomato masala the recipe is already given earlier.
