Step 1
Wash & soak kabuli chana in water overnight. Put the chana in cooker alongwith 2 cups of water, a pinch of turmeric & red chilly powder & cook it by giving whistles required to cook the chana well & then switch off the gas to release the pressure on its own.
Step 2
Next take a kadai, put oil in it & saute cut onions till soft, put kasurimethi & saute for a minute, put turmeric , red chilly powder, coriander powder, chole masala & saute, add cut tomatoes & saute for 5 minutes, add salt & saute again till oil starts leaving the gravy, add water & cook with closed lid till the gravy becomes soft & thick.
Step 3
Now remove the chana from cooker & smash 1/4 quantity of chana well with a spatula & then put the smashed & rest of the chana into the kadai & cook it with masala gravy till it forms a thick gravy. Chole masala is ready to be served with puri (recipe already shared), batura or rotis
