Hi all, today I am giving below a recipe for chicken dry. It is my favourite food & Iam sure many non-vegetarians will enjoy this recipe of mine. Now let me start with the ingredients.

Step 1
Cut the chicken into small pieces, then wash the chicken well & drain out the water.
Step 2
Cut the onions fine. Take a kadai & fry the onions in sunflower oil along with ginger-garlic paste & 1 sprig of curry leaves.
Step 3
After onion is translucent add the red chilly powder & fry a bit & keep it aside.
Step 4
Then take another kadai & roast red whole chillies in sunflower oil & keep it aside. Now fry coriander seeds in the same oil till coriander colour changes. Also add one sprig of curry leaves & fry a bit. Then remove the same from oil. Allow it to cool. Then powder the red whole chillies & coriander seeds into fine powder. Also Add little water & grind again into fine paste.
Step 5
Now mix the ground paste & onion-garlic-ginger together & marinate with washed & drained chicken pieces, add salt & keep it for half an hour.
Step 6
After half an hour put sunflower oil in a big kadai, add the marinated chicken, pour 1/4 cup of water, close with a lid & cook for 45 mins. Do not add extra water unless required as chicken will ooze water.
Step 7
Cook till chicken is cooked completely with very less liquid gravy around it. Finally add coconut oil around it & fry for 2 or 3 mins. Put fresh sprig of curry leaf in it, switch off the gas & close it with a lid for 45mins. After 45 mins. Chicken dry is ready to eat. Chicken pieces will be coated with thick masala without water. Chicken dry is ready to be served with rice as a side dish.
