Papad mangodi is the traditional dish of rajasthan...due to the scarcity of green vegetables in summer....this dish is very common there and can be prepared quickly with some basic ingredients

Step 1
Break the mangodi into small pieces
Step 2
Now heat the oil in a pressure cooker for tempering..when the oil gets heated enough then add mustard seeds and cumin seeds...allow them to splutter
Step 3
Add a pinch of asophoetida and now add coarsely broken mangodi....roast it for a minute on a low flame
Step 4
After a minute or so it will turn light golden brown at this point add turmeric powder, red chili powder, coriander powder and quickly add water into it ...otherwise whole masala can burn

Now stir it and add salt as required..but be careful in adding salt as mangodi and papad both are already salty..

Now cover the lid of the cooker and cook it for two whistles...after two whistles turn off the flame and open it after 5 minutes

Now add finely chopped fenugreek leaves and cook it for two minutes...
Step 8
Finally add papad and cook for two minutes more .......check the seasoning and adjust the consistency to your liking.
Step 9
Seve it hot with Khasta parantas....
