Step 1
Pressure cook Taro root on a medium flame for 1 whistle.
Let the pressure release naturally and allow it to cool down.
Step 2
Put the boiled taros into cold water and wait for 2-3 minutes.
Step 3
Peel the taros and cut them into thick slices.
Now in a deep bowl add turmeric, red chilli, salt and coriander powder.
Step 4
Mix the powders well and add water little by little to form a semi thick paste.
Now add the cooked taro slices in the masala and coat them nicely. Keep it aside for 10-15 minutes.
Step 5
Now in a kadai, heat oil. Add mustard seeds, urad dal and curry leaves.
Then add the coated taro root slices. Roast in low flame.
Toss gently and cook on all sides. This goes well with Sambar, Rasam and Curd Rice.
