tiffin sambar with drumstick

Step 1
To prepare the ingredients :
Chop drumsticks in 2 inch pieces, roughly chop tomatoes, roughly chop onions, chop carrots into 1 inch pieces, slit 3 green chillies, soak a lemon sized tamarind in warm water to extract the tamarind pulp
Step 2
Add the following ingredients into a vessel to pressure cook :
Toor dal, drumsticks, tomatoes, carrots, green chillies, onion, tamarind pulp, curry leaves, 2tsp turmeric, oil, salt and 3 cups water
Step 3
Pressure cook the above mixture till the toor dal is fully mashed. If using a pressure cooker it will take around 3-4 whistles. If using instant pot, keep it for 25 -30 mins.
Step 4
Now heat 2 tbsp ghee in a vessel and add chopped shallots. Once the shallots turn translucent, add 1 tsp turmeric, 3 tsp red chili powder, 3 tbsp sambar powder (I use Shakti sambar powder).
Step 5
Once the shallots and sambar powder is fried well and the raw smell of the sambar powder is gone, add the pressure cooked dal and vegetable mix to this vessel.
Step 6
Mix everything well and let it come to boil. Add 1 tsp of jaggery to add a little sweetness to the sambar and also adjust the salt as needed.
Step 7
Now for tempering heat 1 tbsp of ghee in a small pan and add mustard, hing, dried red chili and curry leaves. Then pour the tempering over the sambar and turn off the heat. Then garnish with some chopped cilantro.
Step 8
Serve sambar hot with Idli, Dosa or Rice.
