simple radish sambar (without sambar powder)
This is a simple radish sambar recipe which does not use sambar powder.

Step 1
Soak the tamarind in warm water for at least 15 mins to extract the pulp.
Step 2
Pressure cook dal till it's fully mashed (Use instant pot for 45 mins or pressure cook till 5 whistles)
Step 3
Heat oil in a deep pan. When hot, add mustard seeds, cumin seeds, green chillies, dry red chillies (you can break this into 2 before adding it), curry leaves, fenugreek seeds and hing.
Step 4
Saute this for a sometime. Add onions to this. Add a little bit of salt and turmeric to it and saute this till the onions are transparent.
Step 5
Add the cut radish to this. Saute for 5 mins. Add tomatoes and saute for a minute
Step 6
Add just enough water to cover all the contents. Add all the masalas in the Masalas section to this and let it boil. Keep it covered.
Step 7
Radish can take a while to get done. It also depends on how thin you cut your radish. In around 30mins add tamarind to the mixture and let it cook for another 10 mins.
Step 8
You can add jaggery at this stage, thought this is optional. Add cooked dal to this mixture and let it boil till radish is done.
Step 9
Garnish with cut coriander leaves. Enjoy with rice. Top it off with a little ghee.
