Step 1
To make the dough: Mix 2 cups wheat flour with 1 tsp salt and 3 tbs oil. Once its mixed well add water and make a soft dough and keep aside.
Step 2
Now for the stuffing, grate the radish and finely chop onions, green chillies and cilantro. Squeeze out all the water from the grated radish so that it doesn't make the paratha soggy.
Step 3
To make the radish stuffing : Mix together grated radish, chopped onion, chopped green chili, cilantro, turmeric, red chili powder, coriander powder, amchur powder, ajwain and salt. Make sure to add salt at the end when you are ready to start cooking the paratha as it will make the radish leave water.
Step 4
Now heat a wide nonstick pan. Take 2 medium size dough balls and roll them into thin chapathi's.
Step 5
Then apply some oil to the surface of one chapati and add enough stuffing to create a think evenly distributed layer on top of the chapati.
Step 6
Now place the 2nd chapati on top of the stuffing and seal the paratha by pressing both chapatis together along the edges.
Step 7
Now lightly roll the paratha on both sides to evenly spread the stuffing.
Step 8
Add some oil to the pan and place the paratha once the pan is hot.
Step 9
Lightly press down on the paratha and cook evenly on both sides on a medium flame till you see golden brown dots on the surface.
Step 10
Make all the parathas by following the same steps given above and serve with a yogurt side dish and some pickle.
Step 11
For yogurt side dish: Mix some yogurt with water to the desired consistency. Then add some grated carrots and finely chopped cilantro along with salt and pepper. This yogurt dish goes well with any paratha.
