simple karnataka style bhindi sambar
This is a very simple Bendekayi (Bhindi/okra) sambar which is easy to make. The only main vegetable used in this sambar is the okra itself

If
you’re
using
raw
tamarind,
soak
it
in
warm
water
for
15
minutes.
Alternatively,
you
can
use
tamarind
paste
instead.

To
prepare
the
toor
dal,
wash
it
thoroughly
and
add
it
to
a
pressure
cooker
or
instant
pot.
Next,
add
water,
turmeric,
and
oil
to
the
cooker.
Cook
the
dal
in
the
instant
pot
for
10
minutes
on
high
pressure
or
for
3
whistles
in
a
pressure
cooker

Wash

okra
and
dry
it
using
a
paper
towel.
Then,
cut
the
okra
into
pieces
that
are
approximately
an
inch
long.

pan
and
add
oil
to
it.
Once
the
oil
is
hot,
add
hing
and
mustard
to
it.
When
the
mustard
splutters,
add
the
cut
dried
okra

the
pan.
Fry
the
okra
in
this
oil
on
medium
to
low
heat
until
it
is
cooked.
I
prefer
it
to
be
done
until
the
okra
is
light
black/brown

dal
is
cooked,
transfer
it
to
a
vessel
and
let
it
boil.
Ensure
that
you
add
the
required
amount
of
water
(avoid
making
it
too
watery).

add
tamarind
and
sambar
powder
to
the
dal
and
let
it
boil.
Step - 3
Add
the
fried
okra
and
grated
coconut
to
the
mixture.
Let
it
boil
on
low
heat
for
around
10
minutes.
