This is a healthy salad recipe which can be eaten as is or as a side to rice and any curry

Step 1
Soak moong dal in water for 2 hours (or 4 hours if you want a lesser crunch) . Drain out the water after.
Step 2
Add the soaked moong dal, grated carrots, finely chopped cucumber, grated coconut, green chillies, coriander leaves and lemon juice. Mix the whole thing.
Step 3
For tadka, add oil in a pan and add mustard seeds. When it splutters add dry red chillies, hind and curry leaves. Saute till the red chillies look done (10-20 seconds) . Add this to the mixed salad bowl
Step 4
Add salt only when you're about to serve.
