Step 1
Taari (Ghee rice)
In a vessel, take 2 tbs oil,1tbs ghee, add the available spices ( cardamom,cinnamon, clove, star anise, bay leaf) let it fry for a minute.
Step 2
Add 1 small chopped onion. Let it turn light golden colour. Add the double quantity of water to that of rice. Bring it to boil. Add salt as per your taste. Add rice. Let it cook.
Step 3
Maasa looqa ( chicken gravy)
In a vessel take 3 tbs of oil.
Chop 250 grams of onion along with green chillies as per your taste. Cook it on lower flame. Let it turn golden yellow in colour.
Step 4
Add finely chopped tomatoes. Let it cook for another 5 mins. Add 1 tsp ginger garlic paste to it.
This is called birista ( mixture of onion and tomatoes slowly cooked along with chillies)
Step 5
Grind coconut and almonds together and make a smooth paste.
Add this to the prepared birista. Cook it well.
Step 6
Add turmeric, cumin, coriander powder, garam masala to the gravy.
Add chicken. Bring it to boil
You can add big chunks of potatoes ( optional)
Let it cook for about 10 mins. Garnish with some freshly cut coriander leaves
Step 7
Serve this with daali paani ( dal )
