Step 1
Wash cut chicken & keep it aside
Step 2
Take a small kadai put 1.5 tsp of oil in it & fry dry red chillies & coriander seeds separately & keep it aside to cool. Next, in the same oil fry coconut well till the colour changes to brown. Also saute 1 sprig of curry leaves & keep it aside.
Step 3
Then, powder dry red chillies first in a mixer, add coriander seeds & powder it well alongwith dry red chillies. This both should be powdered into a smooth powder, then add fried coconut & curry leaves to it & grind again, add water & grind nicely into a smooth paste.
Step 4
Next, take a big kadai, put 3 tbsp of oil into it & saute cut onions till onion becomes translucent, add ginger/garlic paste & saute again, add turmeric, red chilly powder, 2 sprigs of curry leaves, & salt & saute again, then switch off the gas & let it cool.
Step 5
After the onion mixture has completely cooled down add ground masala & cut & washed chicken & keep it aside for 30 to 45 minutes.
Step 6
After 30-45 minutes keep the kadai on gas, put 4 cups of water & cook it with closed lid. After 45 minutes the chicken curry should be ready. Check the chickens are cooked well & the water proportion for the gravy to be had with rotis is ok. Switch off the gas.
Step 7
Put 2 sprigs of fresh curry leaves & keep it aside with closed lid. After 30 to 45 minutes serve it hot with rotis/chapatis etc.
