    This recipe is a very popular kerala dish. This can be made only in a special puttu vessel - Photo attached. Now let me start with the recipe.

    This is premium rice powder known as Puttu podi by product name Nirapara puttu podi.

    Step 1
    Sprinkle water in Nirapara rice powder. Note that water should be warm & not hot. Also add salt. Mix all 3 together. Do not knead like for rotis. Just mix all 3 together lightly with hand & soak for 15-20 mins. Note water to be sprinkled only to just wet the rice powder & remove its dryness. Do not soak like for rotis.
    Step 2
    Now fill water in the bottom vessel of the puttu vessel to half of its capacity & keep it on gas for boiling.
    Step 3
    Next put scraped coconut in the tube part of the vessel with the strainer in it. Layer it - 1st layer scraped coconut, 2nd layer puttu podi. Please note that bottom & top layer should be of scraped coconut & then close the tube portion with a lid as shown in the photo so that puttu powder does not come out while steaming.
    Step 4
    Now load the tube portion with coconut-rice mixture on to the bottom vessel with boiled water in it & steam it for 10-15 minutes.
    Step 5
    Puttu is ready to be served with kadala which is my next recipe. Please do wait for the kadala recipe as Puttu is to be served with kadala curry though it can also be had with Banana & sugar.

    Also note that puttu podi can be of white or brown rice.
