Step 1
Mix besan, kesar & water together. After adding water to the basen the mix should look like dosa batter (see photo attached)

Next, take a deep big kadai, put oil in it & keep it on gas. When oil is hot keep the gas on medium flame. Then take a spatula or vessel with multiple holes in it & pour the basen mix through it into the hot oil & deep fry the basen mix into small boondis. The fried boondhis will be around 5 cups. Note that the fried bhoondis should not be very soft or very crispy.
Step 3
Next, make pak of sugar by putting water in the sugar. Water should be just above sugar. Pak should be one single thin thread when taken between 2 fingers.
Step 4
Finally, put the boondies into the pak & roll it into laddoos when the mix is not too hot & you are able to roll it into laddoos.
Step 5
Bhoondi laddoos are ready. You can also add cashews or raisins after frying in ghee & add it to the sugar solution before making laddoos.
Step 6
Note that you should wash the spatula after each time you pass the besan mix into the oil through the spatula so that the bhoondis come out in good shape.
