Step 1
Take 1.5 cups gram flour (of fine texture) in a mixing bowl or pan, add 2 to 3 pinches of turmeric powder,pinch of asafoetida , 1.5 tbsp lemon or lime juice, 1.5 tsp ginger paste ,1.5 tsp green chili paste,1 tbsp sugar,1 tsp salt,add 1 cup water and 1 tbsp oil to make a thick batter.Stir well to combine,next add 2 tsp Eno or fruit salt, Stir the eno with the batter briskly and quickly, and leave it for 5-10 minutes
Step 2
Grease a steamer pan with 2 to 3 teaspoons oil, Pour the prepared batter into the greased pan, gently shake so that the batter evens out in the pan
Step 3
Place the pan in a steamer,the water should already be boiling when you place the pan in it, Steam for 15 to 20 minutes
Step 4
Insert a toothpick, it should come out clean that means khaman is done
Step 5
Let the khaman become cool completely, slide a butter knife along the edges to release the khaman from the pan, then quickly invert the pan, cut it into square shape
Step 6
To make the temper, heat 2 tbsp of oil in a small pan, add 1 tsp of mustard seeds and allow them to crackle, add 10 to 12 curry leaves, 1 tsp cumin seeds and 1 tsp chopped green chili, add ⅓ cup of water abd turn of the flame, immediately pour this tempering mixture evenly on the khaman dhokla so that it seeps through the sliced edges
